For hot brewed tea, brew your Ti Kuan Yin Oolong tea at 90°C/194°F or higher. It has a natural sweetness and orchid like floral notes. It is great both hot as well as iced. Make a cold brew by placing some leaves in room temperature water for a few hours. It will brew a mellow flavour, with slow extraction and fewer tannins, resulting in less bitterness. The Oolong leaf is semi-oxidised. Semi-oxidised tea means that in terms of colour and flavour it falls roughly mid-way between black and green teas.
