What is Gyokuro?
Gyokuro which translates to “Jade Dew” is one of the highest grades of tea from Japan. The production process of Gyokuro tea is very similar to sencha, the only difference being the cultivation process. Three weeks before harvesting, the tea leaves are protected from the sunlight. This forces the plants to produce more chlorophyll, enhancing the flavour of the leaf. The result is dark green leaves, a refreshing aroma, and sweet flavours.

How to Steep Gyokuro Tea
Gyokuros is considered a luxury so you should take the time to brew it properly to enjoy its full flavour and aroma. Brewing Gyokuro to perfection requires using the proper water temperature and steeping time. Using water hotter than 600 C and steeping for over 3 minutes can dramatically alter the taste of your tea causing it to become bitter and astringent.
Hot Tea
For optimal results, use 1 teaspoon of tea for 350 ml (12 oz.) of water. Let it steep for 2-3 minutes using 60 degree Celsius water.
Cold Tea
To make iced tea, use 1 teaspoon of tea for 263 ml (9 oz.) of water. Let it steep for 2-3 minutes using 60 degree Celsius water. Once steeping is completed, pour over ice and enjoy.
