Canadian ice wine tea
This ice wine tea is the perfect complement to a tea collection thirsty for the truly unique. It’s unlike any other: soft white buds are plucked within the first 48 hours of their opening; allowing for a more delicate flavour. Known for its sweet ambiance, Canadian ice wine is made with grapes harvested after the first frost, and extracted while still frozen. The result is a thick pressed juice which satiates any dessert-lovers appetite. Reminiscent of this wonderful delicacy, our exquisite tea offers a similar experience.
What exactly is a white tea?
So you’ve heard of green tea, black tea, even Rooibos. But what is white tea? White tea is made from the same plant as green tea, black tea, or oolong. But the difference is that it’s made from new growth leaves or buds. The leaves are steamed or pan roaster to inactivate oxidation. They are then dried. For this reason white tea retains high amounts of cathecins (antioxidants) which are present in fresh tea leaves. These tea leaves are from a Pai Mu Tan tea leaf variety. And they don’t just taste great, but they’re also good for you.
How much caffeine is in white tea?
White tea contains bewteen 35 and 55 mg. of caffeine per 8 ounce brewed cup. This is around half that of black tea, in comparison.
How to brew the ice wine tea
White tea is best brewed at around 180F, or 80C. Since it is a delicate tea like green tea, boiling water can scorch the tea leafs, leading to over extraction of tannins. This would result in bitter tea, as the tannins overpower the natural and gentle flavours of the tea. That is why we recommend water at 3 minutes off boil for white teas. Brew time is usually 3-5 minutes for these tea leaves. Use 2 teaspoons to make 12 oz. / 350 ml of hot tea and 2 teaspoons to make 9 oz. / 260 ml of iced tea. Feel like having more? Don’t throw away your used leaves. Steep it again, up to 3 more times!
What kind of teapot works best for white tea?
Since this is a larger leaf, but also has some broken leaf pieces due to the delicate nature of this tea leaf, it is best brewed in a fine tea infuser.
