Make a cold brew by placing some leaves in room temperature water for a few hours. It will brew a mellow flavour, with slow extraction and fewer tannins, resulting in less bitterness. The Oolong leaf is semi-oxidised. Semi-oxidised tea means that in terms of colour and flavour it falls roughly mid-way between black and green teas.
