Blueberry White Tea
Pai Mu Tan tea is cultivated in the Fujian province of China and is world famous for its fantastic quality, perfect flavour, and wondrous ability to blend with practically any essence. The leaves of the Camellia Sinensis plant are plucked in the spring when they are soft and immature, and only the bud and first two leaves are taken. This results in leaves that are tender and sweet! White tea is the least processed of all teas stemming from this plant, and is only lightly dried without rolling or oxidation. Due to its lack of processing and juvenile leaves, it is considered to be the tea highest in antioxidant levels. This blueberry white tea has a peaceful and mellow spirit, yet possesses a mirthful and summery character due to its bubbly berry-ness. We love this tea iced and decorated with fresh blueberries… a delightful refresher for the blueberry-lover in you!
How to steep it
To enjoy this tea hot, add two teaspoons of loose leaf tea for every 12 oz. (350 ml) of water into your tea infuser. Let it steep for 2-3 minutes using 84 degrees C water. White tea leaves are delicate so it’s important not to steep it use boiling water and not let it steep over the recommended steep time. Otherwise, the tea will taste bitter and astringent and in some cases, burnt.
To enjoy this tea cold, add two teaspoons of loose leaf tea into your tea infuser for every 12 oz. (350 ml) of water. Let it steep using 84 degrees C water for 2-3 minutes. Once you’ve steeped the tea, pour it over ice, top with some fresh blueberries and enjoy!
